Can't Beet-a-root Smoothie
This was one of my favourite smoothies when my digestion was at it's worst, it seemed to help things get moving again. I still like to make it when we're feeling a little run down and our body needs a bit of a boost. It's a great way to start the morning as it's quite filling and contains almost all of your daily fruit and vegetable requirements.
Dr Mercola wrote an article earlier this year on the benefits of beetroot which include being rich in valuable nutrients (vitamin C, potassium, manganese, folate) and fiber, inflammation reduction and assisting the body to detoxify.
Maca powder is available in most organic and health food stores and is great for boosting energy levels and balancing the hormone system. We find it helps us to keep our sugar cravings at bay.
Because I use whole fruits and vegetables for this recipe the taste does very slightly from smoothie to smoothie, depending on the size of the pieces. This recipe does also make quite a bit so you can always set aside half of the chopped ingredients for the next day or freeze them for later. Smoothies are best consumed fresh but I have been known to make them the night before so I don't wake up the entire neighbourhood with my blending.
Can't Beet-a-Root Smoothie
1 stalk of celery
1 green apple
half a lemon, peel optional
handful of spinach, kale or beetroot leaves
2 cm knob of ginger
~250ml water or coconut water
1 tsp. maca powder
handful of ice cubes (helps breakdown the hard bits)
Chop ingredients into blender-friendly sized pieces. Blend until smooth. Adjust liquid to suit desired consistency.
